Roasted Strawberry Margarita

Roasted strawberries come together with freshly squeezed lime juice, tequila and triple sec to make one fresh, delicious strawberry margarita.



For Roasted Strawberries
1 pint fresh strawberries, halved with tops removed
1 teaspoon vanilla extract or paste
12 tablespoons sugar

For Roasted Strawberry Margarita
23 tablespoons roasted strawberry puree
2 ounces tequila, preferably reposado
1 ounce triple sec or Grand Marnier
1 lime, juiced
1 ounce simple syrup, optional, homemade or store-bought
1 tablespoon sea salt, for garnish, optional
1 lime slice, for garnish, optional
1 strawberry, for garnish, optional


  1. Heat oven to 350 degrees. On a parchment paper-lined baking sheet, toss strawberries with vanilla and extract. Roast for about 25-30 minutes. Once cool, puree in a blender or food processor. You might need to add a small splash of water to help smooth out the puree.
  2. Pour tequila, triple sec and lime juice in a cocktail shaker. Add a handful of ice. Put the top on the shaker and shake for about 15 seconds. Taste. If you’d like to sweeten your drink, add the simple syrup. You can also pour directly into your glass if you’re making multiple drinks at once.
  3. Spread sea salt on a plate. Run the lime slice around the rim of a glass and dip the glass in the salt. Add more ice to the glass and strain the shaken margarita into the glass. Garnish with a lime slice and strawberry. Enjoy!


If making your own simple syrup, simmer the 1 cup sugar and 1 cup water in a small saucepan over medium-high heat. Stir frequently to dissolve the sugar. As soon as the sugar dissolves, remove from heat.
