Let the prepared pizza dough come to room temperature. Then, lightly flour the countertop and use your hands to stretch the dough.
Melt the Frank's Red Hot Sauce and butter to make the Buffalo sauce. Spread the sauce on the pizza dough, leaving space for the crust.
Toss the chicken with some Buffalo sauce. Top the unbaked dough with the mozzarella, blue cheese (if desired) and coated chicken.
Whisk together an egg yolk and a touch of water. Brush along the unbaked pizza dough crust. This will give the crust a beautiful brown color. Now bake!
