Melt chocolate with butter until smooth. Stir in chopped cherries. Spread onto parchment paper and allow to dry. Break into pieces.
Combine cream cheese and sugars in the large mixing bowl. Beat on medium speed until smooth, creamy and fluffy.
Beat in the sour cream, vanilla extract, almond extract and salt until it all comes together. Now add eggs one at a time.
Pour into a springform pan and bake in a water bath. Wrap the pan well with an oven bag and heavy-duty foil to prevent leaks.
After baking low and slow and resting in the oven, you'll get an ultra creamy cheesecake with no cracks.
