CHORIZO-STUFFED PRETZEL BITES

Stuffed with melted, gooey Gouda and spicy chorizo, these soft, pillowy pretzel bombs are topped with melted butter and a sprinkling of salt to make the most irresistible party snack.

Ingredients

Beer preferably an amber ale Water Sugar Salt Active dry yeast  Flour Butter Oil Gouda Dried chorizo Baking soda Egg yolk Pretzel or coarse kosher salt

Heat water and beer until 100-110 degrees. Pour into a bowl with sugar and salt. Sprinkle yeast on top and let sit until foamy.

1

Add flour and melted butter. Knead to make a smooth and elastic dough. You can use a stand mixer or knead by hand. Cover and allow to rise.

2

Evenly divide the pretzel dough into small balls. Flatten the ball and spoon the chorizo and Gouda in the middle of the dough.

3

To seal each pretzel bite, fold the edges like a present. Pinch the seams and roll in between your palms to make sure the dough ball is well-sealed.

4

Drop the sealed pretzel dough balls into the boiling water and baking soda for 30 seconds. Move to a parchment paper-lined baking sheet.

5

Beat an egg yolk with 1 tablespoon water and brush it over the boiled pretzel dough balls. Sprinkle with salt. Bake until the pretzels turn golden.

6

Your next party isn't complete with a tray of these chorizo-stuffed pretzel bites. They're guaranteed to be a crowd favorite!
