Greek  Cucumber Salsa

With its cooling cucumber, fresh herbs and zesty kick of lime, this Greek cucumber salsa doesn't get more refreshing! It's the perfect summer appetizer.

 Ingredients

Cucumber Roma tomato Red onion Whole jalapeño Lime juice Fresh mint Fresh parsley Salt

Chop up the cucumber, tomato, red onion, jalapeño, mint and parsley. You want them so that they're small and bite size.

Add the cucumber, tomato, red onion, jalapeño, mint and parsley to a bowl along with the lime juice and salt. Stir to combine.

Refrigerate in an airtight container for a few hours to allow the flavors to meld. While it's best the day of making, it will still stay crisp for two or three days. Enjoy!
