HEALTHY BLOOD ORANGE SALMON

Enjoy an elegant yet healthy meal that makes the most of seasonal winter citrus with this slow-roasted blood orange salmon.

Ingredients

Salmon Olive oil Salt & pepper Blood orange slices & juice Garlic Honey Soy sauce Rice vinegar Sesame seeds Fresh cilantro

Rub salmon with olive oil and sprinkle salt and pepper all over. Place the blood orange slices on top and roast in the oven.

Make the blood orange glaze by mixing together blood orange juice, garlic clove, honey, soy sauce, ginger, rice vinegar and a pinch of salt. Cook over medium heat until it reduces.

Remove the salmon from the oven when it finishes cooking. Spoon the blood orange glaze on top with toasted sesame seeds and cilantro and serve.
