INSTANT POT Red beans and rice

A classic Creole dish gets a convenient, modern upgrade with this Instant Pot red beans and rice recipe, loaded with flavorful andouille sausage and tender red beans.


Andouille sausage Celery Onion Garlic Chicken stock Ham hocks Red beans Cajun or Creole seasoning Cayenne Thyme Bay leaves Cornstarch Apple cider vinegar White rice

Using the Sauté function of the Instant Pot, brown the andouille sausage on both sides. Remove and set aside.


Add the celery, onion and green bell pepper to the Instant Pot. Cook until soft, stirring occasionally. Add garlic and stir.


Pour in chicken stock. Add sausage back with the rest of the seasonings. Cook on Manual setting and naturally release the Instant Pot. Mix the cornstarch with water and add to liquid to thicken.


Spoon cooked white rice into a bowl. Top the rice with a big scoop of the red beans with that delicious sauce.
