Add eggs, passion fruit purée and sugar to a heat-resistant bowl and place over a pot of simmering water or a double boiler. Continuously whisk the mixture until it thickens.

The passion fruit curd is ready when it reaches a similar thickness to a hollandaise sauce. Turn off the heat and stir in the butter until it melts.
