Place a pizza stone in the oven and allow it to heat. Meanwhile, melt butter and cook the onion until it caramelizes.

Stretch the dough using the bed of your fingers to pat the dough outward toward the edge. Grab the edge of the pizza and lift it in the air and rotate the dough, allowing it to hang.

Coat a pizza peel or the back of a parchment paper-covered baking sheet with cornmeal and place the hand-stretched dough on top. Spread BBQ sauce on the dough, leaving an edge for the crust.

Top with cheese, caramelized onions, pulled pork and potato slices. You don't need to pre-cook the potato slices, but make sure they're very thinly sliced, and they'll cook in the oven just fine.

Whisk together the egg yolk and water and brush on the crust. This is called an egg wash, and it helps give us a beautifully brown crust. Bake for eight to 10 minutes.
