Peel the potatoes and cut them into quarters. You can use russet or Yukon Gold potatoes — your choice. Both delivery creamy mashed potatoes.
Boil the potatoes. While the potatoes boil, cook butter until it turns golden brown. Stir in heavy cream and sour cream.
When the potatoes are ready, add the potatoes to a bowl and pour the butter mixture on top and add the Gouda. Mash until they reach your desired consistency.
Spoon the mashed potatoes into a cast-iron skillet. If you don't have one, a disposable aluminum pan works well.
Place the pan of mashed potatoes in the smoker. Close the lid. Smoke for about an hour. After that, they're ready for you to devour.
