Add the gin, strawberry-rhubarb simple syrup, heavy cream, lemon juice and egg white to a cocktail shaker. Shake for 30 seconds without ice.
Add a handful of ice, put the top on again and shake vigorously until you no longer hear the ice clink against the cocktail shaker.
Pour into a chilled Collins glass. Top with club soda and garnish with a strawberry slice if you'd like.
