White chicken and corn chili

When you need a bowl of comfort food, you'll love this creamy white chicken chili, loaded with hearty white beans, green chiles and a medley of spices.


Chicken thighs Butter Flour Green chiles Onion Jalapeno Garlic  Chicken stock Spices Cannellini beans Corn kernels Cream cheese  Heavy cream Lime juice Cilantro Toppings

Heat oil until hot. Cook chicken on both sides until they brown. Remove the chicken and reserve for now.


Melt butter. Whisk in flour until smooth. Continue cooking for about three to four minutes, whisking nearly constantly.


Stir in the green chiles, onion and jalapeno. Cook until softened, about five minutes, stirring frequently. Add garlic and cook for 30 seconds, stirring constantly.


Whisk in chicken stock. Add chicken and spices. Boil and then simmer. At the end of cooking, add the beans, shred the chicken and add the cream cheese and heavy cream. Serve!
