WINTER POT ROAST

Cozy up during these chilly months with this winter pot roast, slowly braised in apple cider to make some serious comfort food.

Ingredients

Beef chuck roast Flour Garlic Apple cider Beef stock Tomato paste Thyme & sage Cinnamon sticks Onion Cloves Crushed red pepper Potatoes Carrots

Dust generously with salt and pepper. Sprinkle flour over the chuck roast and pat to coat. The flour helps the roast develop a nice crust.

Heat oil in a large Dutch oven. Cook the roast until it browns on one side. Carefully flip and brown on the other side. Remove from the Dutch oven.

Add the remaining ingredients and bring the liquid to a boil. Turn off heat and braise in the oven until fall-apart tender. You can also find slow cooker and Instant Pot instructions.

To make gravy, strain the braising liquid. Melt butter, whisk in flour and briefly cook. Slowly whisk in braising liquid, bring to a boil and cook until thickened.
