Fresh Strawberry Mojito

For the perfect summer cocktail, you will adore this fresh strawberry mojito! Muddled strawberries, mint and lime come together to make a fruity drink with a crisp, bubbly finish. You can make it as individual glasses or pitcher style — your choice. This fruity mojito is the refreshing cocktail you’ll want to sip on the patio all summer long.

Equipment

  • Highball glass with sturdy bottom
  • Muddler
  • Jigger or small measuring cup
  • Bar spoon

Ingredients

  • 3 strawberries hulled
  • 1 lime cut into wedges
  • 1 ounce simple syrup
  • 8-10 fresh mint leaves
  • 2 ounces white rum
  • Ice
  • Splash of chilled club soda
  • Fresh mint sprig for garnish

Instructions

  • Add the strawberries and lime wedges cut-side up on top in a highball glass. Pour simple syrup over the fruit. Muddle until the strawberries and lime wedges break down.
  • Place the mint leaves on top. Lightly muddle mint leaves. Just a few twists will do to prevent overbruising.
  • Pour in white rum and add a handful of ice. Use the bar spoon to stir the mixture and chill.
  • Top with the chilled club soda. Gently stir again to combine.
  • Place the mint sprig in the palm of your hand. Quickly clap your other hand on top to release the mint's fragrance. Add the sprig to the glass. Enjoy!

Pitcher recipe: To make eight servings, muddle 24 strawberries, 8 limes and 1 cup simple syrup in a pitcher. Add 8 or so mint sprigs and muddle. Then, add 2 cups rum. You can cover and refrigerate for a few hours, though the mint may discolor and you may want to replace it with fresh mint for serving. Right before serving, pour in 2 cups club soda. If you have trouble reaching the bottom of the pitcher, you can muddle everything in a bowl and then pour the muddled contents into the pitcher.
To customize the number of servings, simply multiply the ounces by the number of servings and divide by eight to get the cup measurement. For the mint, scale by figuring one or two mint sprigs per person, and multiply the strawberries per serving.
  • To prepare homemade simple syrup, bring 1 cup water and 1 cup white sugar to a boil, stirring every so often to dissolve the sugar. Once it cools, store the syrup in a sterile, airtight container in the refrigerator. It should last for about a month.
  • While muddled fruit is the more traditional way to make a mojito, you can either shake and strain the drink in a cocktail shaker or blend the strawberries into a purée if you don't want any fruit chunks. Use 2 tablespoons of purée per drink.
