Make a favorite beach cocktail even more tropical with this ultra refreshing passion fruit mojito! Prepared with freshly muddled passion fruit, mint leaves, white rum and bubbly club soda, this twist on a classic Cuban cocktail tastes like summer in a glass. Grab a seat on the patio with this fresh mojito in hand and you’re in for the perfect evening.
2ouncespassion fruit puréefresh or thawed from frozen (see notes)
1limecut into wedges
1ouncesimple syruppreferably homemade (see notes)
8-10fresh mint leaves
2ounceswhite rum
Ice
Splash of chilled club soda
Fresh mint sprigfor garnish, optional
Instructions
Add the passion fruit purée and lime wedges cut-side up on top in a highball glass. Pour simple syrup over the fruit. Muddle until the lime wedges break down.
Place the mint leaves on top. Lightly muddle mint leaves. Just a few twists will do to prevent overbruising.
Pour in white rum and add a handful of ice. Use the bar spoon to stir the mixture and chill.
Top with the chilled club soda. Gently stir again to combine.
Place the mint sprig in the palm of your hand. Quickly clap your other hand on top to release the mint's fragrance. Add the sprig to the glass. Enjoy!

8-serving pitcher recipe: Muddle 2 cups passion fruit purée, 8 limes and 1 cup simple syrup in a pitcher. Add 8 or so mint sprigs and muddle. Then, pour in 2 cups white rum. You can cover and refrigerate for a few hours, though the mint may discolor and you may want to replace it with fresh mint for serving. Right before serving, gently stir in 2 cups club soda. If you have trouble reaching the bottom of the pitcher, you can muddle everything in a bowl and then pour the muddled contents into the pitcher.To customize the number of servings, simply multiply the ounces by the number of servings and divide by eight to get the cup measurement. For the mint, scale by figuring one or two mint sprigs per person.
To make fresh passion fruit purée, cut several passion fruits in half, add the pulp to a blender with a splash of water and process. Pass the mixture through a fine-mesh sieve to remove any larger bits and seeds. Alternatively, you can use 2 ounces of straight passion fruit pulp, but you will get seeds.
To prepare homemade simple syrup, bring 1 cup water and 1 cup white sugar to a boil, stirring every so often to dissolve the sugar. Once it cools, store the syrup in a sterile, airtight container in the refrigerator. It should last for about a month.
