Notes
8-serving pitcher recipe: Add 2 cups tequila, 1 cup lime juice, 1 cup orange juice, 1 cup orange liqueur, ½ cup simple syrup and a handful or two of ice to a large pitcher. Cover and refrigerate for up to 24 hours. When you're ready to serve, stir the mixture again and shake as directed, planning for 5 ounces per drink. This method gives you proper dilution and aeration for the best texture. If you want guests to serve themselves, add a handful or two of ice and stir for 15-30 seconds to add some of the dilution you'd get with shaking. However, you won't get the aeration. Keep a spoon around for periodic stirring.
Use limes that have some give when you press into them. Hard limes are dried out.
Agave nectar can be substituted for simple syrup in the same quantity.
