Chai Bee’s Knees

Love a classic cocktail with a twist? This chai bee's knees is just for you. With its sweet honey and bright lemon, you still get the traditional flavors of this gin favorite, but a touch of chai spice gives it a unique spin for the perfect spring fling cocktail.

Equipment

  • Small saucepan
  • Cocktail shaker
  • Jigger or small measuring cup
  • Citrus juicer

Ingredients

  • 1 ½ ounces brewed chai tea
  • ½ ounce honey
  • 2 ounces gin
  • ¾ ounce freshly squeezed lemon juice
  • Ice
  • Lemon slice or twist for garnish, optional

Instructions

  • Stir together the brewed chai tea with honey until the honey dissolves. It's easier to do this while the chai tea is still warm. Allow to cool for a few minutes or store in an airtight container in the refrigerator for a few days.
  • In a cocktail shaker, add the chai honey syrup, gin, lemon juice and ice. Pop on the top and shake vigorously for 15-30 seconds.
  • Strain into a coupe or martini glass. Garnish with a lemon slice or twist if desired. Enjoy!
