Notes

Pitcher recipe: For an eight-serving pitcher, add 2 cups peach purée, 2 cups vodka and ½ cup fresh lime juice to the pitcher and stir to combine. Right before serving, gently stir in 6 cups ginger beer. You can make the peach mixture ahead of time and store it in the refrigerator for up to 24 hours before adding the ginger beer.
  • To make the peach purée, add chunks or slices of peeled peaches to a blender with a splash of water and process until smooth.
  • The peach purée will keep in an airtight container in the refrigerator for three to four days. As time goes on, the peach purée will oxidize and darken in color. To preserve a brighter color, add some fresh lime or lemon juice to slow down oxidation. Alternatively, you can freeze the peach purée.
  • For an even stronger peach flavor, use peach-flavored vodka. If you can find it, I highly recommend the peach-infused vodka from Wild Roots.
  • Make sure you use ginger beer, not ginger ale.
