Notes

8-serving peach martini pitcher recipe: Stir together 2 cups peach purée, 2 cups vodka, 1 cup peach schnapps, 1 cup simple syrup and ½ cup lemon juice. Refrigerate up to a day. When you’re ready to serve, stir the pitcher well, pour 6 ½ ounces per drink (just over ¾ cup) into a cocktail shaker with ice and shake as you would.
  • Plan for one peach per drink. While this is dependent on the exact size, one peach should yield about 2 ounces of peach purée.
  • To make the peach purée, add chunks or slices of peeled peaches to a blender with a splash of water and process until smooth.
  • The peach purée will keep in an airtight container in the refrigerator for three to four days. As time goes on, the peach purée will oxidize and darken in color. To preserve a brighter color, add some fresh lime or lemon juice to slow down oxidation. Alternatively, you can freeze the peach purée.
