Why You Need to Make This Recipe

A cocktail in frozen treat form -- what's not to love about that? A boozy dessert always turns heads when entertaining, and this rum sorbet is no exception.

After all, what's not to love about the classic mojito flavors? Mint, lime and rum make for one cooling drink, and when you bring those flavors to a strawberry sorbet, you have the perfect light summer dessert with an extra shot of adult fun.

Plus, sorbet's small ingredient list makes it an economical dessert, and it's a great way to use leftover fruit to cut down on food waste. Who doesn't appreciate that?

Besides sorbet's low-key, simple preparation, it's great if you need a dairy-free or vegan dessert option. I don't know about you, but almost all of my go-to desserts use dairy or eggs. Most of the time, it's not a problem, but every now and then, those dietary restrictions come up when entertaining. This mojito sorbet is the perfect easy and tasty option for those times.

Ingredients

As you see, most of the strawberry mojito sorbet ingredients are typical of what you'd find in a strawberry mojito. The only ingredient you wouldn't find is the corn syrup.

I know a lot of people avoid corn syrup, but it makes for a smoother, less icy sorbet. If you have strong feelings against corn syrup, feel free to leave it out, but I like the creamier texture that comes with it. Plus, we don't use a lot, so I have no problem including it.

Step-by-Step Instructions

All right, let's get started with this easy strawberry mojito sorbet recipe.

Step 1: We first make a simple syrup by cooking water, sugar, fresh mint and lime zest on the stove (photo 1). Once we cook the simple syrup long enough to dissolve the sugar, we allow the mixture to steep for about 10 minutes and then stir in some fresh lime juice.

Step 2: While the simple syrup steeps, we slice off the strawberry tops, cut them in half and add them to a blender (photo 2). Now we remove the mint from the simple syrup and pour into the blender with the optional corn syrup. We give our blender a whirl until it becomes a pureé (photo 3).

Step 3: And just like that, we're ready to chill our strawberry mixture. This step is important to make sure the sorbet properly sets in the ice cream maker, so don't skip this.

Step 4: After our strawberry puree chills, we're ready to churn. Of course, for that mojito kick, we need to add a little white rum, which we pour in toward the end of churning (photo 4).

Step 5: Now we pour the sorbet mixture into an airtight container (photo 5) and store it in the freezer for a few hours to allow it to firm up. At this point, the sorbet will have a soft serve-like texture but don't worry. Freezing the sorbet takes care of it.

Once the freezer works its magic, we're ready to scoop and serve. If you'd like to get fancy, I recommend serving this strawberry mojito sorbet with a fresh mint sprig and more lime zest. Grab a spoon and enjoy this perfect summer dessert.

Recipe FAQs

How long to freeze before serving?

We want to make sure we churn well before serving. Expect this sorbet to take about four hours in the freezer before it's ready.

How long will sorbet keep in the refrigerator?

This mojito sorbet should last about two to four weeks in the freezer. This is dependent on storing well and making sure air doesn't get to the sorbet.

Do I need an ice cream maker?

This recipe was specifically developed for an ice cream maker. You really can't beat the texture churning gives it. I love my Cuisinart ice cream maker and highly recommend this model. Plus, you can use it to make other homemade frozen treats, like this fresh mint ice cream, Baileys Irish Cream ice cream and gingerbread ice cream.

Can I skip the alcohol for a non-alcoholic version?

Absolutely. You will love this sorbet with or without rum.

Expert Tips

  • I like to chill the mixture overnight to make sure it's plenty cold. If the pureé is not cold enough, it won't set up properly when churning. Bonus: This makes it great for easy entertaining.
  • If you don't have enough time to wait overnight, I recommend first placing the strawberry pureé in an ice bath and then transferring to the refrigerator for at least four hours.
  • Feel free to play around with other fruits. You can easy make this into a blackberry or raspberry mojito sorbet, for instance. Simply substitute the strawberries for your favorite fruit.
  • Make sure you use white rum, not dark rum, and add it to the end of the churning process. Adding alcohol to a sorbet or ice cream base too early can prevent it from properly setting up.

Perfect Pairing

With the delicate mint flavor, we want to keep our pairings light. Rather than a straight beer, I like pairing this strawberry mojito sorbet with a lemon shandy, which is a mix of half beer and half lemonade.

Some breweries offer pre-made shandies, but I prefer to make my own with a homemade lemonade or high-quality store-bought lemonade. That said, if you have a premade shandy you enjoy, feel free to use that.

Strawberry Mojito Sorbet

Equipment

  • Medium-size saucepan
  • Blender
  • Large mixing bowl
  • Ice cream maker

Ingredients

  • 1 cup water
  • 1 cup white sugar
  • 3-4 fresh mint sprigs
  • 1 lime zested and juiced
  • 2 pounds strawberries
  • ¼ cup light corn syrup optional
  • 2 tablespoons white rum

Instructions

  • In a small saucepan, stir together the water, white sugar, mint sprigs and lime zest. Bring to a boil and then lower to a simmer. Stir to dissolve the sugar. Once the sugar dissolves, turn off the heat allow the mixture to steep for 10 minutes. After it steeps, remove the mint sprigs and stir in the lime juice.
  • As the simple syrup steeps, slice off the tops of the strawberries and cut in half. Place the prepared strawberries in a blender. Pour in the simple syrup and add corn syrup (if using). Blend until smooth. If your blender is on the small side, you might need to do this in two batches, but a large blender should be able to handle it all at once. Cover and store in the refrigerator for several hours until cold, preferably overnight.
  • Pour the strawberry pureé into an ice cream maker and churn according to the manufacturer's directions. In the last minute or two of churning, add the white rum.
  • Pour the churned strawberry pureé into an airtight container and store in the freezer for several hours. Scoop and serve. Enjoy!

Notes

  • If you don't want to use corn syrup, you can leave it out, but it makes for a creamier sorbet and keeps it from getting too icy, so I prefer to use it.

    I love sorbet. I have a batch of blackberry lime freezing now. But, I have a question about the corn syrup. I have never added it to mine. Does it change the texture?

      Hi, Sara! The corn syrup helps it from getting icy, so it adds a bit of creaminess, but I've also had sorbets without it that are still delicious. I just like to add the corn syrup to make sure it doesn't get icy.

    I love, love sorbets for the very reasons you've listed. They are those perfect vegan dessert options that are so rare to find. Everything else seems to have dairy in some form or the other.
