Once rhubarb hits the shelves, it’s time to get our fill of this tart, springy treat. Rhubarb is typically in season from April to June, so we don’t have long to make the most of it. Of course, that means plenty of crumbles, pies and cakes, but don’t forget cocktails. I never do.

Rhubarb is a hard stalk, so you might wonder how the heck we incorporate this fruit into a cocktail. Easy -- an infused simple syrup. If you've made some of my cocktails, like this plum-thyme margarita, sage-fig cocktail or chai bee's knees, you already know how much I love an infused simple syrup. Using an infused simple syrup adds so much flavor without requiring much effort or technical cooking expertise, yet the end result is one fancy, impressive cocktail that makes you look like a mixology master.
On top of our rhubarb, this gin cocktail gets another springy touch with fresh strawberries. While strawberries are available yearlong, I just had to add them to this unique gin fizz. Strawberries and rhubarb make for a classic pairing, and a gin fizz is a classic cocktail. Bringing them together only makes sense, right? Right.
Step-by-Step Instructions
Before we start mixing, we need to make a fresh strawberry-rhubarb honey simple syrup. This step is easy, but I recommend planning ahead. We want to give this syrup time to steep to get the most flavor, though you could skip this step if you’re in a time crunch.
To make our fruity honey simple syrup, we add equal parts honey and water to a small saucepan with sliced rhubarb and strawberries. As we bring the mixture to a boil, we smash the fruit to help infuse the flavor. Once it boils, we steep, strain and chill.
Bonus: This syrup works well for other cocktails too. Look no further than my honeyed strawberry-rhubarb mimosa.
Now for our cocktail! We add the strawberry-rhubarb honey simple syrup to a cocktail shaker along with freshly squeezed lemon juice, gin, heavy cream and an egg white and give it a shake.
And, yes, this recipe calls for an egg white. The egg white gives us that frothy head, and I promise it doesn't taste eggy -- it simply gives us a velvety, luxurious texture to make this gin cocktail extra fancy.
After the dry shake, which helps give us more froth, we add ice and repeat. Usually, I shake my cocktails for 15-30 seconds, but since we want that frothy topping, I recommend shaking until you no longer hear ice clink against the cocktail shaker. Some bartenders shake their egg white cocktails for several minutes, but I've always found about two minutes is plenty of time. That said, if you're looking for an arm workout, feel free to keep shaking.
We now pour our gin fizz into chilled glasses, top with club soda, add a strawberry garnish if you’re inclined and sip the night away. Delicious, huh?
Are Egg Whites Safe in Cocktails?
Generally speaking, you should feel safe drinking a frothy egg white cocktail. Raw egg white is a classic cocktail ingredient that's been used for well over 100 years. Yes, we can't get a 100 percent guarantee when consuming a raw egg, but it shouldn't be a problem for most people.
That said, if you or any guest has a compromised immune system, you can skip the egg white to be safe. Pasteurized eggs are also a good option if you feel nervous about using the raw egg white.
Perfect Pairing
I always love gin with smoked salmon, and salmon and berries match well. Salmon shows off a richness that pairs with sweet flavors while the tart strawberries and rhubarb add the perfect brightness against a fatty fish. With that in mind, I have no doubt you'll love my smoked salmon, avocado and pesto pizza with this strawberry-rhubarb gin fizz.

Strawberry-Rhubarb Gin Fizz
Equipment
- Cocktail shaker or jar with solid lid
- Saucepan
- Fine-mesh sieve or strainer
- Citrus juicer
- Jigger or small measuring cup
Ingredients
For Strawberry-Rhubarb Honey Simple Syrup
- 1 cup honey
- 1 cup water
- 1 ½ cups strawberries hulled and halved
- 3 3 rhubarb stalks sliced
For Strawberry-Rhubarb Gin Fizz
- 2 ounces strawberry gin (see note)
- 1 ounce strawberry-rhubarb honey simple syrup
- ½ ounce heavy cream
- 1 ounce lemon juice about ½ lemon
- 1 egg white
- Ice
- Club soda
- Sliced strawberry for garnish, optional
Instructions
For Strawberry-Rhubarb Honey Simple Syrup
- In a small saucepan, stir together honey and water. Add strawberries and rhubarb and bring to a boil over medium-high heat. Stir to dissolve the honey and periodically mash the fruit. A potato masher works especially well for this, though you could also use a wooden spoon or wide spatula.
- Once it comes to a boil and the honey dissolves, turn off the heat. Give the fruit another mash to release its flavors. Allow to steep for about 30 minutes. Strain, pushing down on the fruit to extract as much syrup as possible, and chill. This can be done ahead of time and stored in an airtight container in the refrigerator for a couple weeks.
For Strawberry-Rhubarb Gin Fizz
- In a cocktail shaker, add the gin, strawberry-rhubarb honey simple syrup, heavy cream, lemon juice and egg white. Put the top on and shake for 30 seconds. Without the ice, the shaker may leak a bit.
- Add a handful of ice, put the top on again and shake vigorously until you no longer hear the ice clink against the cocktail shaker, about two minutes.
- Pour into a chilled Collins glass. Top with club soda and garnish with a strawberry slice if you'd like. Enjoy!

- If you don't have strawberry gin, a regular London dry gin will work as well.
